Blueberry Muffin Top Cookies
Just like every famous invention, I was busy making chocolate chip cookies, and blueberry muffins in the same day. I grabbed a bowl of dough out of the refrigerator and started making cookies and realized half way through that I was using the muffin batter. EUREKA! I decided to roll the cookie balls in raw sugar and cinnamon and bake them like cookies. They were sooo good that the kids ate them all and I had to make a second batch just to make sure that it wasn’t a fluke. It wasn’t!!

1/2 cup butter, softened
3/4 cup sugar
2 cups flour (I used unbleached all purpose flour)
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 cups blueberries
1 tablespoon flour
In a large bowl cream together 1/2 cup butter, and 3/4 cup sugar. Add egg and beat well. In a separate bowl, combine flour, baking powder and salt. Add flour mixture to butter mixture alternately with the milk. Toss blueberries with 1 tablespoon of flour and gently fold into batter. (The batter is so stiff that I didn’t feel like I needed to flour the blueberries.)
Now roll the cookie balls into raw sugar and cinnamon. The batch above I used regular sugar and they were fine but the raw sugar gives a nicer crunch!
I baked them 400 degrees for 10 -12 minutes. If you use the raw sugar then watch them carefully so they don’t burn on the bottoms.
