Happy New Year!

Rosh Hashanah   Happy Rosh Hashanah!  Whether you celebrate or not, it is always nice to have a sweet treat.  When you celebrate the new year it is important to eat something that symbolized health (apple) and happiness or sweetness (honey). A mini little apple pie is the perfect way to add some apples and honey to sweeten your day!   I used the Martha Stewart Perfect Pie Crust Recipe .  Please try making your own pie crust,  it is really easy and sooo delicious!!

 For the filling I used one Granny Smith and one Jazz apple.  Just add a tablespooon or two of honey, a sprinkle of cinnamon, a pinch of salt and a little lemon juice if you have it.  Cut out circles of dough with a biscuit cutter or a mason jar lid.  Use a teaspoon of filling and then seal the edges with the tines of a fork. I put an egg yolk wash on top with a sprinkling of raw sugar on top.  Bake at 425 for 12-15 minutes.  Serve with a little drizzle of honey!
