When you want to eat Coconut Oil Frosting for Breakfast

I had a moment the other morning when I was eating toast.  I normally eat toast with a schmear of coconut oil, then I drizzle on some honey, and then generously sprinkle it with cinnamon.  It is delicious.  Then a brilliant and lazy idea hit me.  If I combined all of the ingredients I could do it all in one swipe!  Yes it is lazy, but it turned out amazing!!

It is super easy and delicious!  My two favorite things.

Three simple ingredients:  Spectrum Organic Coconut Oil (It is local for me!), L. R. Rice Local Honey (It is good for you!) and Cinnamon.

I used about half of a jar of Coconut Oil.  Warm it up in the microwave for a few seconds if it is solid.  I hear that in some parts of the country their coconut oil is liquid.  In Colorado weather it is solid.  Microwave it for 10 seconds then when it is easy to stir it is done.  DO NOT MELT IT!  Just smooth it.

Then I used an equal amount of Local Honey.  I like the raw kind, but whatever you have will work.  This looks pretty for the picture, but take the lid off and glug it right in there.

I used two or three teaspoons of Cinnamon.  I happen to LOVE cinnamon, so just add it to your taste.

Now mix it all up in a stand mixer or a hand held one.  This will fluff it all up.  Start it out slow then blend it at the highest speed for about 20 to 30 seconds.

I put mine in a Bonne Maman jar that I had laying around.  Once again I can leave this at room temperature here, but you may need to refrigerate it if you live in sunny Arizona.

Schmear it on some toast and you will do a dance.  It tastes like frosting and delicious cinnamon toast and all things great in the morning!

Yes I found that little toast thing at Goodwill,  Yes I washed it before you insist on asking.
