Coconut Macaroon Almond Joy


I made some delicious coconut macaroons after watching Carla Hall make some on The Chew.  They are really simple and delicious!

Organic Coconut

I used this Organic UnSweetened Coconut.  I found it at my local Super Target.  I wanted to use unsweetened coconut to cut down on the sugar a little bit.

The coconut was a little dry so I re-hydrated it in warm water for about an hour.  Then I strained out the water and made sure that it wasn’t “wet”.  You do NOT have to do this step if you use the sweetened coconut.

Transfer the coconut to a mixing bowl and add 2/3 cup of Sweetened Condensed Milk. Then add a big pinch of salt.  (trust me)

Then add 2 Egg Whites and 1 Tablespoon of Vanilla or Almond Extract. ( I used Vanilla because Almond Extract is not my favorite)  Add the egg white and vanilla to the coconut and mix it together.  No need to use a mixer just use a wooden spoon.

While you are doing that, toast some Raw Almonds in a preheated 325 degree oven.  Only toast them for 5 minutes.

I used a tablespoon of coconut mixture, rolled it into a ball and then added a roasted almond on the top.  You don’t have to use almonds, just skip this step if you like.

Bake at 325 for 20 – 25 minutes, or until the cookies a slightly browned on top.

Microwave a cup or so of semi-sweet chocolate chips until they are melted.  I just dunked the cookie right in and then put them on parchment paper to cool.  If the chocolate is too thick add a tiny bit of coconut oil to thin in out.

Try some sprinkled with sea salt!  They are delicious!
